  令和元年度は、研究初年度として、国内外における倫理的消費に関する文献収集、食品の消費に関する文献および情報収集をおこなうとともに、生活協同組合の産直先となっている乳製品メーカーへの聞き取り調査を2件実施し、参考情報を収集するために乳製品メーカー以外の食品メーカーおよび生産者グループへの調査を2件実施した。
  先行研究では、有機農産物や有機食品に関する調査結果が多く、倫理的消費の対象食品として、それらのものが挙げられていることが明らかとなった。しかし、有機認証を取得していない食品であっても生産プロセスを見れば、食の安全、環境への配慮、地域貢献に貢献している食品があり、これらの食品も含めて研究調査を進める意義は大きいと考えられる。
  今回調査をしたメーカーおよび企業は４件とも、中小規模の企業であり、取引先が消費者団体であることもあり、生産プロセスに関する情報提供には透明性があり、原料から加工・出荷までを、消費者に細かく情報提供していることがうかがえた。うち２件については調査報告として研究所紀要に掲載した。, kaken

  バングラデシュでは、従来TBAによる自宅分娩が中心であったが、MDG5の目標である妊産婦死亡率の低下のために、施設分娩への移行とskilled birth attendant(SBA)による介助がめざされた。施設分娩を促すためには、女性たちに現金を配布する政策（demand side financing)や助産師やFWV（Family Welfare Visitor)の養成が行われた。
  また、女性の側への調査としては、マダリプル県ラジョール村を対象地域として、村の女性たち、公立病院の医師、私立病院の医師、TBA、FWV、助産師への聞き取りを行った。それによると、女性たちの多くは自宅でTBAによる介助を希望しているにもかかわらず、結果的に病院で出産することになり、その多くが帝王切開になっていた。その理由として、私立病院が患者を集めるためにブローカーを雇い、妊産婦と接触するTBAやFWV,公立病院の医師に働きかけていることがわかった。TBAは、産婦を私立病院に送ることで、自宅で取り上げるのとほぼ同じ金額を病院からもらっていた。その結果、帝王切開率が急上昇し、女性たちの産後の回復が遅れ、女性の健康が損なわれる結果となっていた。施設分娩が妊産婦死亡率を下げるとは必ずしも証明されていないにもかかわらず、バングラデシュにおいては施設分娩が強力に進められた結果、帝王切開率が増え、女性の健康にとってはマイナスの結果が生じている。

• Grant-in-Aid for Scientific Research (C), Apr. 2019 - Mar. 2022, 19K12561, Coinvestigator, 地域の食文化を対象とした観光の形成手法と波及効果に関するアクションリサーチ, 片上 敏喜; 青木 美紗; 上野 秀剛; 加賀美 太記, Japan Society for the Promotion of Science, Grants-in-Aid for Scientific Research Grant-in-Aid for Scientific Research (C), Nihon University, 4160000, 3200000, 960000, 近年、和食がユネスコ無形文化遺産に登録されたことを機に、食文化を対象とした観光が注目されている。食文化は、地域固有の風土に根ざした食材、道具、調理法、食べ方などから構成され、地域の観光資源として機能する。しかし、観光を通して食文化が人々の生活にどのように溶け込み、存続・変遷するのか、という相互作用を明らかにした研究はない。そこで本研究では、食文化を対象とした観光活動を「食文化観光」と定義し、多様な研究視角から分析を試みることを目的としている。
  初年度となる2019年度は、食文化と観光に関する先行研究および文献資料収集、関連学会・研究会等への参加し、様々な関連情報の収集等の調査を行った。また研究調査において、これまでの観光研究では食を対象とする場合、飲食に関する行為が主であり、対象地域のみにしか存在しない固有の食文化を捉えた観光ではないケースが多いことがわかった。一方で、観光者の食文化への関心の高まりや、訪問先となる地域の生活を実感したいというニーズがあるということについて調査を通じて捉えることができ、地域固有の歴史や文化から形成される食文化を対象とした観光活動の重要性に関して、共同研究者と詳細な検討を行うことができた。
  加えて、観光活動に参加した人々の地域の食文化に対する意識や行動の変化について調査を行うため、地域の食文化に詳しいNPOの協力を得て、奈良を対象地として「食文化観光」を企画し、研究者自身が研究対象に関わりながら、実際の観光活動のあり方や参加者の変化を観察するアクションリサーチを実施した。また本アクションリサーチで得た調査データについては、取りまとめて研究誌で発表を行った。

At the markets, promotion for such agricultural crops has been conducted, giving loyalty program. Through questionnaire survey and interview survey targeting users of the farmers markets, most consumers purchase the crops for the purpose of getting award of loyalty program. Questions such as household members’ age, marriage status, property ownership, microcredit, reproductive experiences, time use and geographical movement for both men and women were asked. Results show that Bangladeshi villages are undergoing extensive changes due mainly to remittance from overseas work. Medical facilities such as private clinics are increasing each year bringing about medicalization of pregnancy and birth in both villages. In order to improve women’s reproductive health, it is important that women should know their own bodies as well as increase knowledge on reproduction.
